"This series of work is about pork’s beauty and economy. My original inspiration came from the French saying Dans le cochon, tout est bon or “every part of the pig is good to eat”. This saying got me interested in the economy of pork, the idea that very little is wasted when a pig is slaughtered for food. I have been researching, eating and painting my way though an incredible variety of pork products, most of which are found in my local supermarket. In rendering the diversity of products I have also discovered pork’s visual beauty, the way that a string of fat separates two different colors in a piece of ham, or the pattern of the chunks of fat in a piece of mortadella. The wrinkles in a pig’s trotter can resemble of the wrinkles in our own hand and as the trotter sits in a pool of its own blood it can remind us of our own vulnerability. Pork has a kind of honesty that I have come to respect and find beautiful." |
